Thakka Polo with Palak|Palak Dosa with buttermilk

Thakka Polo is a dosa variety which is popular in our community. Thaak in konkani means buttermilk/chaas in hindi. I have made a small twist to the regular thakka polo and have added spinach to make it healthier.

Ingredients for thakka polo:

1 cup dosa rice or any other white rice(except biryani rice)

½ cup puffed rice(charmuri)/murmura

1 cup yogurt or 1 ½ cup butter milk * check notes

½ cup Spinach puree *check notes

Salt to taste

Oil to grease


Method:

To begin making the thakka polo, we will first wash the rice and soak the rice and puffed rice together in 1 ½ cup of buttermilk in a bowl. Soak them for at least 4 hours.

After 4 hours, grind the rice and puffed rice into a fine smooth batter. While grinding add just enough water to make it into a very smooth batter. Pour this batter into a large container.

Combine the rice batter and spinach puree, add salt to taste and set aside for at least 6 hours or overnight until the batter ferments.

Do make sure you place the batter in a large container so it has enough room to increase in its volume.

Once risen in volume, stir the batter just a little to combine it through. Take care not to stir it vigorously, as it will lose it fluffiness.

Heat a skillet over medium heat. You will know its heat just right, when you sprinkle some water over the skillet, it will sizzle.

Pour a ladleful of batter over the skillet and allow it to spread on its own (just a bit). Pour a few drops of oil on top of the dosa. The thakka polo/dosa is like a pancake. It's a little thick and fluffy. Cover the dosa with a lid and allow to cook in its own steam for a few minutes.

Once you notice the top is steamed and cooked through, you can remove it from the skillet and serve. Proceed the same way to make the remaining Thakka polo/buttermilk dosas.

Serve the Thakka polo with Chutney or pickle or sambar.


Aps Notes:

Basically, thakka polo has no spinach, I have added to give a healthy touch to dosa. You can avoid this if you don’t like. But kids will like the green colour of this dosa.

You can replace palak/spinach puree with beetroot puree or carrot puree to make it other colours and flavours.

If you notice I have mentioned 1 cup yogurt or 1 ½ cup buttermilk. If you want to make buttermilk then take 1 cup yogurt add ½ cup water and whisk well. This makes 1 ½ cup buttermilk.

To make spinach puree add in 1 cup of spinach in boiling water for a minute and strain it. Grind it into a smooth puree.
