Lady's finger fritters are called benda bajo in Konkani.
Benda being ladyfinger/okra. My mom makes the best benda bajo’s. Amma would
prepare ladyfinger bajo for afternoon lunch to go with dal rice or dinner for
Pej and both these combinations are just out of the world. These bajo’s are
easy & so quick to make. The seeds give a good crunch to these bajo. Do try these bajo’s next time you buy ladyfinger.
Here's her recipe below.
Ingredients:
12 ladyfingers/okra/bhend/bhindi
2-3 green chillies
3/4 th cup gram flour
Salt to taste
Oil for frying
Serves: 2
1. Wash bhend, using a cloth dry them well making sure there’s no moisture while chopping.
2. Chop ladyfingers once they are completely dry. Slit ladyfingers vertically into 2 pieces. Then chop them into 4 pieces horizontally.
3.Finely chop green chillies.
4. Add in chopped green chilli, chopped lady's finger and mix well.
5. In a deep bowl, mix gram flour, salt.
6. Add the bhend/ladyfinger pieces to the flour mixture and mix well, rest this mix for 2 minutes the bhend/ladyfinger will release some moisture by then.
7. After 2 minutes if you feel the batter asks for more water then add a little (please make sure batter is dry and not like watery consistency we want a sticky mixture holding everything together.)
8.Heat oil for frying, when hot take a tablespoon of hot oil and add it to the baje mixture mix well.
9. Deep fry them in oil on medium heat until they're golden brown.
10. Enjoy them hot while they're all crispy and crunchy.
11. You can serve it as appetizer along with dal and rice.
Aps Notes:
Please take care before adding water as we do not want a runny batter as we need a lumpy mixture.
If you wish add in red chilli powder, I personally do not prefer. Please add spice according to your tolerance.
