Mix Vegetable Upkari

Upkari

The term Upkari stands for a side dish whic involves stir fried vegetables that are tempered with mustard seeds and red chillies and fresh grated coconut . It tastes best with rice and dal, or even rasam.

This is a very healthy dish and can be eaten as is.

Ingredients.

1 carrot peeled and cut into small pieces

5 baby corns peeled and cut into 1” roundels

1 zucchini washed and cut into small pieces

10-12 soaked cashewnuts

2-3 long dry red chillies, broken ( you can use byadgi/kashmiri or round chillies)

1 teaspoon mustard

2-3 tablespoons grated coconut

Coconut oil for frying- 2 tbsp(feel free to use oil of your choice)

Method:

 In a wok/kadai heat some oil and when it is hot add in the mustard. When the mustard stops spluttering toss in the broken chillies, stir for a few seconds taking care to see that the heat is on medium and tempering doesn’t burn.

Add the shredded chopped vegetables and cashewnuts, salt to taste, coconut (check notes)and lightly sprinkle it with water around 3-4 tablespoons. Cover the pan and cook for a few minutes –vegetables should not get mushy or overcook. It must be just done.

 Remove from heat and serve hot with rice or chapathi’s, or eat as is like a stir fry


Aps Notes:

You can add coconut at the end and cover the pan for a few seconds (the heat is necessary for the coconut especially during summer to ensure that the coconut doesn’t turn stale after a few hours).

You can add potato or peas to this or minus any vegetable ( don't add cabbage or for this combination, it can be made separately)
