What do you do with a large Pumpkin?
Make curries? Pasta? Soup? I make all these but here I have
made a sauce that is versatile.
Here are the ingredients for this sauce :
2 cups pumpkin peeled and cooked (use only 1/4th
cup water) *
1 large bell pepper
1 medium onion
10 garlic cloves(I have used indian garlic,if using big
garlic adjust accordingly)
2 tbsp. olive oil
Italian seasoning(1 tsp dried basil, ½ tsp rosemary,1 tsp
oregano,1/2 tsp dried sage) *check notes
2 tsp. black pepper
Salt to taste
Method:
Wash and wipe the red bell pepper.
Roast bell pepper on an open flame until it turns black on all the sides. You can roast the bell pepper in an oven too.
Place the roasted bell pepper in a bowl and cover it for few minutes.
Meanwhile, peel garlic and chop it into pieces, peel onion and chop into pieces(there’s no need of fine pieces).
Now take the bell pepper and remove the burnt skin completely and chop them into pieces.
The prep is done lets make the sauce.
Heat a deep pan add in olive oil, to this add garlic and onions and sauté well.
Now add the cleaned and chopped bell pepper and cooked pumpkin pieces and toss it just for 2 minutes.
Allow it to cool a bit making sure the mixture isn’t extremely hot as it might cause a kitchen accident.
Add this mixture to a blender along with Italian seasoning,salt and pepper.
Blend into a silky smooth sauce.
Sauce is ready to use for pasta,spreads or even soup.
Aps Notes:
Please do not add extra water. The water in the mixture must be just enough if using as a spread.
To cook pumpkin peel pumpkin and cut into small cubes,add 1/4th cup water and pressure cook the pumpkin. If you are cooking on a open pot then adjust water accordingly.
Here I have used Italian seasoning which I had dried using fresh leaves. You can use the Italian seasoning that is available with the pizza delivery.
You can add chilli flakes to the sauce, but I added only black pepper. Have used chilli flakes in the pasta.
To make soup dilute the sauce to thickness you like and adjust spice and salt.
