Aam ka achar

This is the first time I made a pickle with oil, that too mustard oil.

It was liked by my family so I am drafting this recipe for Aps Kitchen readers.

Ingredients Of Aam Ka Achaar

2 1/2 Kg mango, chopped into small cubes/pieces

10 cloves of garlic peeled 

50 gms mustard coarsely ground

100 gms dried red pepper or Kashmiri chilli coarsely ground

20 gms onion seeds/kalonji

100 gms fennel seeds/saunf

50 gms turmeric powder

300 gms salt

½ liter mustard oil

How to Make Aam Ka Achaar

1. Heat a pan to this add in ½ cup mustard oil into a smoking point, switch off the flame and add in the garlic cloves and close the pan and cool it down into room temperature. Mix all the spices together and into the half cup of oil (heated and cooled) to the mix. Sprinkle a little of this mixture into the jar.

2.Take some mangoes and rub them well in the spice mixture. Pour one layer of the mangoes in the jar and sprinkle some more achar mixture on top.

3.Keep repeating the layering process with a sprinkle of mixture till the all-mango pieces are used up. Put all the remaining mixture on top of these layers.

4.Now heat the rest of the oil and cool it completely pour into the jar. Keep in the sun for a week then store. The mango pieces will be very tender in a month.

5.Serve with your favorite paratha or dal rice!

Aps Notes:

Please make sure the raw mango you are using here is sour as we will not be using any other souring agent.

If you do not want to use mustard oil here then you can use sesame oil but the heating process can be avoided, as mustard oil has a pungent smell, we heat it and use.

 You can avoid adding garlic, we love the flavour of garlic.
