My Mother-in-law makes these laddoo’s during Krishna Janmashtami which is my husband’s favourite.
I call it protein laddoo as It can replace all the protein bars that are sold
in the supermarkets laden with sugar and preservatives.
If you make these laddoo's please let me know .
Lets begin with making them!
Ingredients needed for this protein laddoo:
Kala chana/brown chickpeas -1/4th cup
Moong beans/green gram whole- 1/4th cup
Peanuts/kadlo/kadalekayi – ½ cup
Black sesame seeds- 2 tbsp
Puffed paddy powder/aralu/layi-1/4th cup
Dark Jaggery/anta god/ antu Bella- 1 and ½ cup
Broken Cashew nuts- 2 tbsp
Cardamom Powder- 1/2 tsp
Ghee- 1 tsp+ extra for greasing
Let’s begin with roasting:
In a wide bottom pan roast the grains like chana, moong and peanuts,
cashew nuts(cut into tiny pieces), sesame seeds, one by one until it is brown
and not burnt. A lovely aroma will waft while roasting these grains. Place the
grains separately to cool completely.
Once cooled down pulse the moong and in a mixie or blender
into a coarse pieces.
For moong and chana just blow the skin away by placing it in
a plate. There is no need to blow all the skin away a little skin will be of no
harm.
For the peanuts deskin the roasted peanuts and break open
them, keep aside.
Now start heating the jaggery on a medium flame along with
4-5 Tbsp of water. The jaggery begins to melt and starts to boil. Strain the
jaggery, this is done to remove any impurities in it. pour it in the same pan.
Continue heating till the end point. To know the end point,
add 1-2 drops of melted jaggery in a small bowl containing water. The jaggery
should form a firm drop and it should turn little hard.
Once this consistency is reached, add the roasted split
peanuts, sesame seeds, cardamom powder, ghee and mix quickly.
Add the coarse powders of the grains, then add popped rice,
peanuts cashew nuts, sesame seeds and cardamom powder and give a good mix until
everything comes together. Allow the mixture to cool slightly but make sure it’s
warm still (until you can handle the heat). Remember that the mixture hardens
as it cools. So, it has to be formed into laddoo’s as soon as possible.
Once it is ready to handle, take a small amount of the laddoo
mixture in your greased hands and make a laddoo. Repeat the same for the rest
of the mixture and make laddoo’s. allow the laddoo’s to cool completely and
store in an air tight container.
Aps Notes:
My mother in law does not add cashew nuts but I did. If you
are allergic to nuts please avoid peanuts and cashew nuts the laddoo will still
taste good.
We can make 30 medium sized laddoo’s with this mixture and 50
small sized laddoo’s.
If you want to make a smaller batch of these laddoo’s you
can halve the amount and make them, the process remains the same.
Happy Cooking,
Aps
