Schezuan Veg Fried Rice/ Sichuan Veg Fried Rice

Chinese food is the next favorite to our Konkani food. We at home love it.  Mainland China is the only place I have tasted Yummmmmmy Chinese food, now that doesn’t mean others are bad they are yummy too. 
These days I cook at home as much as possible especially Chinese because here in middle east I find a very less variety when it comes to Vegetarian. 


I still remember going to one of the restaurants in mangalore during college days and ordering for Schezuan fried rice…. Oh my it was nothing but a chilli rice. Apart from the chillies we couldn’t taste anything and that day onwards I hadn’t ordered this kind of rice in any Chinese joints. But to my luck one fine day I got a chance to taste the same rice which was much more tastier and yummy to my last experience or say 1000 times better. Then on I always wanted to make this rice at home but unfortunately never knew how to make it. But one fine day I saw the tarla dala’s show on tv and pen down the recipe. Since then I keep making this sauce at home and use it for various dishes.




So Here is the Recipe
Here is what we need:

2 cups Cooked Rice (Preferably long grain rice if u don’t have that one u can make it with the one u have)
1 tsp garlic, chopped
1 cup mixed vegetables, diced(carrot, beans, and a little cabbage)
2 tbsp Schezuan Sauce
1/2 cup Mushrooms
1 tbsp Sesame oil
Salt to taste
Method
  1. Heat the oil; add the garlic and sauté till it turns golden in colour.
  2. Add the vegetables, mushrooms and sauté for 2 to 3 minutes.
  3. Add the Schezuan sauce and cook for another minute.
  4. Add the rice and salt and mix well.
  5. Toss for a few seconds till all the ingredients are mixed.
  6. Serve hot.
