Veggie Pizza/Vegetable Pizza -Wholewheat thin crust

I had posted a pizza recipe 10 years back which I kept tweaking the recipe just because I wanted a healthy base.

Initially I would not mind using All Purpose Flour but due to healthy options I have switched to whole wheat flour, I have even made multigrain pizza base, ragi base and all those have been a success.

 

Here is the pizza recipe:

For pizza base:

3/4 Cup warm water

1 Packet active dry yeast or instant yeast -2 1/4th tsp

2 Cups Whole Wheat flour

1 tsp Sugar

1 tbsp Milk powder(optional)*

3/4 tsp Salt

3 tbsp Olive oil

Let's make Pizza base

Pour 3/4 cup warm water into small bowl, add in the sugar and stir in yeast.

Let it stand until yeast dissolves, about 10 minutes.

 In a large bowl add flour with the frothy yeast mixture with wooden spoon or hands.

 When all the flour is combined add in salt and oil. Knead  until dough forms a non sticky ball.

 Add around 1/3rd cup more flour if dough is very sticky.

Lightly brush a large bowl with olive oil.

Transfer the dough to prepared bowl and turn it, to coat with oil.

 Cover the bowl with plastic wrap and let the dough rise in warm draft-free area, until doubled in volume (about 1 hour).

 Pizza Dough is ready.    



Now For the Sauce:

1 clove garlic, mashed and minced

1 teaspoon salt

6 ounces tomato paste

8 ounces tomato sauce

1/2 teaspoon sugar

1/8 teaspoon pepper

1/2 teaspoon oregano

1 tablespoon olive oil

dash red pepper flakes, optional




Preparation:

Combine all ingredients and cook for 15 minutes on medium flame. Makes about 1 1/2 cups, enough for 2 large pizzas




Now lets get to other ingredients needed for the pizza

50-100 gm  mozzarella cheese

Veggies -mushrooms, capsicums, onions cut into small dices, fresh corn kernels,broccoli(optional),olives sliced

Italian Herbs (oregano, thyme, basil, rosemary/you can use the mix Italian herbs that you get in a bottle

Assembling the Pizza:

After an hour when the pizza dough is ready punch down the air pinch 2 balls of the dough and flatten it into a round  or a rectangular base ( I make a rectangular one as the round one I have is small(thin or thick crust is your choice, I like thin crust)with hands or rolling pin and prick with a fork.

Place the Pizza dough on a baking pan (or on pizza stone if u have one).

Spoon on the pizza sauce, and place the topping on the base, sprinkle cheese, some herbs.

Bake pizza  for 180 deg celcius  until the crust is browned and the cheese is golden, about 10-15 minutes. If you want, toward the end of the cooking time you can sprinkle on a little more cheese.

I made some tart pizza with the same base and sauce just to get a different feeling you see.

You can go wild with your toppings or shapes


Aps Notes:

You can make the pizza base and store it in the refrigerator and use it within 2 days or bake the crust for 8 minutes and freeze it once cools down. This stays well for a months time.

You can add any non vegetarian option to this pizza too.

Adding milk powder is optional I add as it gives a good texture to the base.
