We are a kind of raw veggie freaks….. or parboiled vegetables…. And all such crunchy stuffs…
Whenever I make stir fries we skip our food… and only relish stir fries…. J J J
I never added mushrooms and bok Choy as I never had them in my pantry
So here is what I used:
Ingredients:
½ cup spring onion whites, cut into cubes
¾ cup baby corn, cut into wedges (parboiled)
¾ cup cauliflower florets (parboiled)
½ cup fresh corn kernels (parboiled)
1/2 cup carrots diced (parboiled)
½ cup French beans sliced (parboiled)
4 dry red chillies, broken into pieces
4 teaspoons Schezuan sauce
2 teaspoons corn flour mixed with ½ cup water
A pinch sugar
1 tablespoon oil
Salt to taste
Method:
Heat the oil in a wok or a frying pan, add the dry red chillies, cabbage and ¼ cup water and allow it to cook till the water evaporates.
Add the spring onion whites and stir fry for another minute.
Add all the other vegetables and the Schezuan sauce and cook for a minute.
Add the corn flour paste, sugar and salt. Mix well and allow it to come to a boil.
Serve immediately.
Here is the recipe For Schezuan sauce:
Ingredients:
12 to 15 dry red chillies, soaked in warm water
2 tablespoons garlic, chopped
6 tablespoons white vinegar
2 teaspoons sugar
2 tablespoons oil
1 teaspoon salt
Method:
Drain out all the water from the chillies and discard it.
Grind all ingredients except the oil in a blender to a fine paste. Keep aside.
Heat the oil to smoking point and pour over the chilli-garlic paste. Mix well, allow it to cool and store refrigerated in an air-tight container.
Tips
Select bright red chillies for a rich flavored sauce.
Preparation Time: 5 mins.
Makes 3/4th cup.
