Churmundo/Wheat flour Laddoo

Iam sure Most of Us have learnt cooking from Mom.... I learned the basic step of cooking to the nook nd cook of curries from my mom.
But when it came it came to sweet goodies i just enjoyed them but never tried them... Churmundo was the dish which I wanted to learn from a long time... I always had stuck in the part of making laddoos round... am sure its lack of practice.
This time when Amma came here she taught me step by step method to make these sweet goodies... Not only this she taught me many more things :)
We enjoyed the laddoos... nd not on m going to try them now n then.
SO here is the recipe

[Wheat flour Laddoo]
 Ingredients

Atta/wheat flour – 1 cup
Chick Pea Flour - 1/2 cup
Sugar – 1 cup (adjust acc to sweetness)
Cardamom – 2-3 seeds[Crushed]
Ghee – 1/2cup
Cashew nuts,raisins – a handful

Method:
Powder the sugar along with the cardamom.
In a thick bottom kadai,add ghee.
Add the atta and mix well-the mixture will start bubbling,keep stirring.
Roast the atta and chick pea flour for 20-25 minutes on low flame stirring continuously.
Switch off the flame allow it to cool a bit(u can say it shud be warm) (this is becoz when we add sugar powder it should not melt)and add the powdered sugar.
Add Raisins and roasted cashew nuts add it to the mix and make laddoos while the mix is still warm.

Batate Pej Upkari/ Potato Stew


A simple Dish is always The best!
And this is one among them. Amma makes this at home where as there are other ways to make this dish too!
Batato means Potato and Pej means a thick stew! 
I am posting Amma's version of it.

For this we need:
Potato -2 cooked, peeled and cubed
Thick coconut milk - 1 cup
Water - 1/2 cup * see notes
Maida or cornflower - 1 tbsp
Hing A pinch or hing water a tsp
Salt to taste
Jeera- 1 tsp
Mustard seeds - 1 tsp
Curry leaves -10
Coconut Oil or Vegetable Oil(i used coconut oil) for tempering
Green chilly - 1
Red Chilly - 1

Method: 
Heat a pan add coconut milk and potato, green chilly and boil it 5 minutes.
When bubbles start appearing add salt and hing to it.
Now mix the maida in half cup water and add it to the potato stew.

Simmer the stove meanwhile.

Allow it to bubble for next five minutes, the gravy gets thickened. In case u feel its more thick u can add extra water of u wish to.
After 5 minutes switch off the flame.
In a tempering pan heat oil and add mustard seeds and jeera. when it splatters add curry leaves and broken red chillies. and temper it over the Stew, and Enjoy!

This tastes yummy with Appam, white rice or Dosa.
Note: When u strain the coconut milk, u keep aside the first thick milk and then remove the thin milk once again.
U can use the thin milk instead of using water for the above recipe mentioned.
I have done it that way this increases the richness of the curry and gives a extra coconut flavor!

Curd Rice/Mosranna


My Little Daughter Loves Curd Rice and So does her Anu(Dad) and So does her Dad's Dad!.... May be The family Love!
And at my mom's place all are not such a Lover of it! Whereas Anu and me Love eating Dahi/yogurt with Sugar and sometimes sugar and rice flakes. And Amma with just salt and my brother doesnt like it even! 
I have not at all feasted on Curd Rice anytime till the Last year. Somehow I made it someday in 2012 as i was short of vegetables and my rice had got sticky.... Don't know if it was the taste or the yogurt we get here made it Super Yummy!
And The love for it has increased so much that i make it atleast once a week.Its such a confort food and I wonder why i never loved it so much(may be because of the dahi we got in India or what??). I add pomegranate to it as Little M loves them too(u can see in one pic where she picks one of them while I click).
Its Healthy and Kids will surely love it when u add Pom Pom (pomegranate) in it!

Here Is what we Need to make Curd Rice Delicious:

1 cup white rice, washed, cooked till soft and lightly mashed
3 cups fresh curd/yogurt
2 green chillies, chopped 
Chopped coriander for garnish
Few pomegranate seeds for garnish (optional)

Tempering/Tadka:
2 tsps oil
1/2 tsp mustard
1/2 tsp black gram dal
1/2 tsp channa dal
8-10 curry leaves
1/4 tsp asafoetida/hing
Salt to taste


Method:
Mix the yogurt and salt with the cooled cooked rice. Mix well.
 Add chopped ginger and green chilies. Mix with the curd rice.

 Heat oil in a pan, add mustard seeds and let them splutter. Add the black gram dal,channa dal and allow to brown a bit then add curry leaves. Add asafoetida and turn off heat and immediately add to the curd rice. Stir the tempering into the rice and mix. Adjust salt if required. If the curd rice consistency is too thick, add a little bit of water and mix.
 Garnish with coriander leaves and pomegranate seeds. Serve chilled or at room temperature with pickle.

Cool Cool Double Deckered Ice Candy Or Popsicles - My daughters Favorite


January has passed and its already the second day of the second month... And Tomorrow is my darling Daughter is celebrating her second birthday. Isn't that fast... I just felt like she was given in my hands just a few time ago....  
Now this needs to be celebrated with her favorite I Candy(ice candy) this is what she says.
I have been regular in including fruit in her food diet. She loves fruits, apart from musambi/sweet lime. I dont know why she doesnt like it much... But i always eye on to include that too... so i made these candy's. 

It has fruits in it Her favorite kiwi and her favorite mango juice too!
So here is how I made it.
I took: 
1 cup fresh mango juice *
1 cup fresh orange juice*
1 kiwi peeled and sliced
Half cup chopped Musambi/sweet lime

I made it this way:

Take the popsicle mould and arrange them with the sliced and dice fruits and freeze it for 2 minutes. By then the fruits get stuch to the mould. Now add the mango juice to half the level in each mould and free for 30 more minutes. Remove them again and add orange juice and cover it and freeze until done. This process takes a while to make it. But once done and given to your Kids the joy seeing them enjoying it has no bounds! 
My daughter dint even know which was the other fruit in it apart from Kiwi. She enjoyed every bite of it!

* Note:
Add a little extra sugar to the juice as we freeze it later, this helps in maintaining the sweetness of the pops!

Yields: 8 popsicles
