I remember those variety of Kadi’s which Mamama(granny) and Amma prprd and I always relished them… My last post was Taikile Chutney so I thought y not post something of tht leaf itself and made kadi…. Which is very simple and yum….

Taikilo (cassia leaves)  are found during rainy season and there r varities made out of this leaf. JJJJJJJ

First prepare Taikile  Chutney. The recipe is HERE.
Then add water to liquidize it (don’t make it too watery)
Add salt if required as we add salt to the chutney already J.
Now boil this well until u get 2 bubble boil.
Heat A tbsp ghee or Oil. Add crushed Garlic ( I add lots as I love Garlic) and fry until done .
Now temper it on the Kadi
Serve with Hot Rice.

Paneer Butter masala to relish with hot Phulka's

Its been long time since both of these ver in my blog…. But I cudn post them with one or the other reason… I guess its ryt time now….

I m not a big fan of Paneer as of mushrooms but one fine day as I was curdling milk for rasmalai I realized there was some extra paneer and did not want to waste it so I made paneer butter masala.
And when matter comes to phulkas I m very bad at rolling them round and if tht happens they wont fluff like a bubbly…. And when I was in doha I had electric coils but not gas stove…. And there I saw this way of making phulkas and tried it… and it turned to be a supe success… I continued this method until I was there…. And now I can proudly say m good at making phulkas…. Nd now I roll them far better than before J

1 cup Wheat Flour
Salt to taste
sugar ½ tsp
water to mix
Flour for dusting
Method:
Mix well the flour, sugar and salt.
Start adding water till you get soft pliable dough.
Knead well for 5 minutes. It will become smooth.
Rest the dough for 30 minutes. Again knead well and divide this into 4 equal sized balls.
Use all the flour for dusting. Roll it into medium sized rotis. No folding or hole inside. It will not fluff orelse.
Method:
Keep the skillet on the stove on medium heat.
Put the roti in the center. Let it cook for few seconds. Small bubbles will appear on top.
Once it is half done, turn it to other side. Let it cook for 1-2 minutes.
Then remove the skillet and show the ½ cooked portion directly on the flame. It will rise like Poori. The heat must be even and medium through out the process. Remove it from the fire.

Special Tip: which i used from Here

For those who don’t have gas stoves like I did, this can be done with bread toaster. Make small rounds and cook till 50% on skillet. Then slide them in the bread toaster at medium heat. They will puff and remove them. But you can’t make big sized pulkas by this method.

Batate Butthi

Its been weeks since I m here….. I was a bit bz with some tit bit work….. nd yeh now m bac with a interesting Konkani Cuisine which has been our fav….when ever I think of potato nd onion I remember Mamama’s Batate Butthi nd recently tasted Batate Song by my MIL…. Both r lip smacking good…. Nd mind me I can never even get tht taste….. I tried them a lot…. But tht taste naaaaaaaaa
I remember discussing with Divya Kudua about this dish nd she was so fast tht she even is done with th posting long time ago…..Photobucket

My posting is too late I guess :P
Here’s the recipe for batate butthi
Potatoes – 2 boiled and mashed coarsely
Onions – 2finely chopped
Grated coconut – ½ cup or half coconut
Red chillies – 4-5[roasted in a tsp oil]
Tamarind -1 small piece
Coriander seeds – 1 tsp
Salt to taste
Oil – 1 or 2 tbsp
Method :
Grind the coconut, red chillies, tamarind and coriander seeds to a slightly coarse paste.
In a kadai add oil and sauté the onions till golden brown.
Mix in the cooked potatoes-and sauté well.
Add the ground masala and salt to taste and just enough water to make it into a thick gravy consistency
Switch off the flame when the potatoes are covered with masala[about 10 minutes]
This curry tastes awesome if prepared 4 hours before serving….. (thts the secret of this curry)
It tastes awesome with Dosa, white rice and roti.
I served it with Idli batter Dosa.

Photobucket

Replacement : you can add mushrooms instead of potato and this will turn into “alambe Butthi”
The alambe which we get in mangalore during this season is totally different compared to the regular ones…

Simple White Bread

It was always a success when I prepared bread at home when I was In Saudi… but here I nevr like the yeat which we got (The Blue Bird Brand) it never even proofed. This was not only my problem but few days before when I was just having a chit chat vth Prathibha she too told me the same….
The making of pav was a super flop twice so I decided to borrow yeast from one of my friend who is good at baking…. I loved tht yeast and it gave me delicious Bread…I got to know now which brand was it and let u all know.  It just fluffed like a darling and I enjoyed making the bread and we enjoyed the bread with bhaji (instead of Pav).
Photobucket

So here is the recipe for a Simple white Bread
Ø  3/4 cup warm water
Ø  1 package active dry yeast
Ø  1 tsp salt
Ø  1-1/2 tbsp sugar
Ø  1 tbsp vegetable oil
Ø  1/2 cup milk
Ø  3 cups all-purpose flour, approximately
Preparation
v In large bowl, add the warm water. Slowly stir in dry yeast and sugar . Continue to stir until yeast is dissolved and allow it to proof for 15 minutes.
v Now to the yeast Add salt, oil, and milk to bowl. Stir.
v Mix in the first 2 cups of flour.
v If needed, begin adding more flour, one tablespoon at a time.
v You do not need to use up all the flour required  for in this recipe, or you may need more flour than required. The amounts vary depending on many factors, including weather, which is why most bread recipes only give an approximate amount of flour as needed.
v Turn dough out onto floured board and knead, adding small spoonfuls of flour as needed, until the dough is soft and smooth, not sticky.
v Put dough in buttered bowl, turn dough over so that the top of dough is greased. Cover and let rise in warm spot for 1 hour.
v Punch down dough. Turn out onto floured board and knead.
v Preheat oven at 180 degrees C.
v Form dough into loaf and set in buttered bread pan. Cover and let rise for about 30 minutes.
v Put in oven and bake for about 45 minutes or until golden brown.
v Turn out bread and let cool on a rack.Cut into slices and serve accordingly.
