Limbiya Saaru & Phanna Taak / Lime rasam & Spiced Butter milk

Hey guys hope u r in pink of health. I’d decided that 2010 I must regular in blogging….if not once in 2 days atleast once in a week or so…. I hope I can keep up to it…. Here is our Favorite Rasam and Butter Milk….. It may be my Amma, my bro or my hubby we just love it ….. I dint add my dad bcoz he doesn eat onion and garlic….
Any ways keeping all the talks aside I quickly give u the recipe
For Limbiya Saaru / Lemon Rasam
Take a big lime and squeeze out its juice…..And keep aside… remove all the seed from the juice because seeds make them bitter.

For 2 cups of Nisshe/ Starch water ( Starch water extracted after boiling rice will be the best…. I use that)if u don’t have that u can do that with normal water too Add a lemon sized jaggery, 2 slit green chillies,Salt mix well and bring it to boil… Get a proper bubble boil for 10-12 minutes, now add the extracted lime juice and boil for 5 more minutes….
In a small frying pan heat 1 tbsp ghee , add 15-16 crushed Garlic(do not mash it just beat it with any hard thing so that it gets a slit , we normally do it with small stone….) and fry them till Golden brown…. Add only the Garlic to the Rasam retain ghee in the pan…
Now use that ghee for seasoning… Add 1tsp of jeera(cumin seeds) to the ghee whe splatters 1 red chilly(broken ) and remove from flame and add it to the Rasam….
Make sure the Rasam is on flame….. Once the seasoning is added remove from flame and serve hot with Steamed White Rice…. U can even drink it like a soup if u love to…..
The process is very easy just luks lengthy….

When I meet my frenz they tell me Hey Lime saaru is like a life saver…. Can me made ne time of the day….
Especially when u finish preparing ur rice do not throw the drained water instead collect it for the Rasam.
Now for the Phanna Taak
We need
2 full glasses of thin butter milk (I love it to be sour)
I m a Garlic fan So I added 15 crushed Garlic ( u can add acc to ur choice)
Red Chillies -2 broken into small pieces
Salt to taste
Hing a pinch
Oil – 1tsp
Method: Heat a tsp of oil, add crushed Garlic and fry til golden brown, then add red chillies and add this to the Buttermilk… Now add hing and salt to taste. Mix well.
Here is Phanna Taak to relish…..

For the rasam adjust the spice and sweetness according to your taste.

Note: I may not be able to reply back to u for a few days because we r in process of shifting….. So please do not mind if I don’t get back to u soon….. I may even get a bit less time to browse… but once I m back I will surely come back to norm…..

Veg Frankie

Hey All !!!! b Hope U all enjoyed ur New year.. got bac to norm….. Our new yr was superb.. we had been to Jet ski, Sand dune…. Beach…nd the whole day was simply superb…. (day bcoz 31st nyt all my plans went super flop…) Ne ways leave tht aside and lemme think of wht good had happened…. M sure this yr is gonna give me new surprises nd will be a fun filled year…. Wishing the same to all….

I had always heard about Veg Frankie ….but never tasted it neither had tried it out..Its famous in Mumbai…. This is one among my Hubby’s fav’s So on spl request I googled aroung here nd there nd clubbed many posts nd got into one….. : ) ….. It was tasty nd yummy… The only thing wht happened was my roti’s very small :P……

Here is wht we need
For the Tikki –
Potatoes boied nd mashed -2
Frozen green peas boiled nd mashed – 1/4th cup
Carrot grated – 1
1 teaspoon ginger garlic paste
1 teaspoon chilli powder( add according to spice reqd)
Fresh coriander leaves finely chopped
salt to taste
2 tablespoons oil to fry
1 teaspoon cumin powder
1/2 teaspoon chat masala
1 tsp Kitchen King Masala
Mix all the Ingredients well and make small balls… flatten the tikkis, heat a griddle and Shallow Fry each tikki until crisp. And keep aside.
Other Ingredients req…
Tomatoes thinly sliced – 1
Onions Thinly sliced – 1 or 2
French Fries – I used – but optional
Tomato Ketchup
Chaat masala to sprinkle on each roti
4-5 rotis or flatbreads ( I used Phulkas), If U have Left over Chapathis or phulkas u can use them too....
Method to make Rolls/Frankie’s
Place A phulka…. Spread Tomato ketchup sprinkle a pinch of Chat Masala, Break the tikkis into 2 and place it on the roti, keep 3-4 French fries, onion slices and tomato slice on them, roll and close both ends forming a neat wrap.(My phulkas were not pretty big so I cud not roll it completely)
Some make it like a mixture and also add instead of tikkis, U can try both the ways :)
Note: Apply a toothpick in the center to hold the roll if the rolls are not completely closed (or ur rotis or phulkas r small) this helps the mixture not to fall out.
This is a veg recipe, but you can also add eggs to make it A Egg Frankie.

Verdict- Fantastic dish that is very filling!
Serves -2
Yields 4 Frankie’s

~Happy New Year 2010~

New year is everyone’s Day…. Wishing U all A very Happy Nd A Prosperous New Year…..Let this coming year be better than all the others. Vow to do some of the things you've always wanted to do but couldn't find the time. Call up a forgotten friend. Walk tall, and smile more. You'll look ten years younger. Don't be afraid to say, 'I love you'. Say it again. They are the sweetest words in the world.
Do U Guys Make New Yr Resolutins…. I do-don’t :D…. It all depends on my mood….. :D. I Trust in doing things as we like and about resolutions it need not be done on new yr it can be done ne day of ur life Unless nd Until Kept up….........

I do think New Year's resolutions can't technically be expected to begin on New Year's Day, don't you? Since, because it's an extension of New Year's Eve, smokers are already on a smoking roll and cannot be expected to stop abruptly on the stroke of midnight with so much nicotine in the system. Also dieting on New Year's Day isn't a good idea as you can't eat rationally but really need to be free to consume whatever is necessary, moment by moment, in order to ease your hangover :D. I think it would be much more sensible if resolutions began generally on January the second :P.
With New Ideas New Recipes Aps Kitchen gets U the New year Post…….
How about A dessert????/
I’ve always had Kulfi Ice Cream In Ice Cream Joints neva thought of making them at home…. Amma used to make ice creams at home but she never tried out kulfi’s at home…nd I never tried Ice creams :P….. So with lozza discussion nd thoughts I decided to make them at home….. Nd its one of the fav in our family…..
I adopted the recipe from Sanjeev Kapoor’s book…. I think I have told u tht he is my Fav Chef…..:)

Here Is the recipe:
Am Indian dessert flavoured with saffron and almonds served ice chilled.

Milk-3 litres
Sugar-1/2 cup
Condensed Milk - 4-5 tbsp
Almonds, toasted 20 (U can use them without toasting but toasted almonds give a crunch)
Green cardamom powder a pinch

Heat milk in a saucepan and bring it to boil. Simmer and reduce to one litre (five cups), stirring constantly. Add sugar and stir till it dissolves.Add Condensed Milk. Chop the toasted almonds and add it to the milk. Add the cardamom powder and mix. Pour in the prepared moulds, seal them airtight and freeze them in the refrigerator.

Recipe Tip :
To make the kulfi in the minimum time: take one and a half liters of milk and reduce it to one litre and add 400 grams of condensed milk and proceed in the same way.

Preparation Time :1-2 hours

Servings :6

P.S - If U dont have Kulfi moulds then dont worry Pour them into Glasses (I Poured them In Used Icream Container....If they r plastic then just tear out the cover nd cut :))
