Orange & Coconut Marble Cake

M missing my school days where we used to celebrate Christmas….. Sing Carols , decorate cribs ….have competitions Nd more of all m missing those sweets nd savories, cakes nd cookies frenz used to get ……… Awww I loved them …. Thanks to all who brought them and had fun together :).
Here is todays recipe which was there in my draft for pretty long time… I thought this wud be the right time to post a cake……
Here goes the recipe for Orange and Coconut Marble Cake….

I tried this out myself without following ne blog… just made it like the Marble cake.

We need

All purpose flour – 2 cups
Eggs – 3 ( instead of baking powder nd baking soda)
Orange Essence – 1 tsp
Orange Juice – 1/4th cup,
Water – ½ cup
Coconut milk – 1/4th cup
Butter – ½ cup
Powdered Sugar – 2 cup
Desiccated Coconut – 4-5 tbsp

Method:
Preheat oven for 375* F.
Cream butter until fluffy add eggs one by one and beat for 5 minutes on medium speed until fluffy.
Add powdered sugar and mix well.
Now add flour lil by lil and without forming lumps, water and beat for 5 minutes.
Now divide the batter into two equal portions and to one portion add orange juice and mix well.
For the other portion add coconut milk(shudn be much thick), desiccated coconut and mix well
Grease a round baking tin and pour the orange batter first and then the coconut batter and repeat the same until done … take a tooth pick nd just move it in the mixture….. and bake for 35 – 40 min or until toothpick inserted comes out clean.
Cool the cake for a while nd place it on a wire rack.
Cut into pieces.
Orange Coconut Marble Cake is ready to Serve.

Double Joy on 17th Decembe

Hey folks,

M sure all ya are doing gr8. Another weekend is done d all r waiting for the next one…… my weekend went on super…… this weekend was something spl to do…… double joy….. The first one is my Parents wedding anniversary nd next one is My Bday……

Yeh all heard it ryt….. the lady writing here was born on her parents Wedding anniversary…. December 17th ….. Isn’t tht gr8…. I m a yr older now L…. Sometimes I feel Wish I cud be a kid….. free from tensions…..responsibilities…… But then I realize it can just be a thought…not reality… (m sure all might have been thinking the same).

It was not only my Bday it was Qatar National day too…… SO I can say the whole country celebrated my bday :P.

This yr my hubby dear made it much more spl by surprising me with a spl cake…… Not the regular cake but I can say Guru’s spl cake…. I was not allowed to come in the kitchen for half n hr …..…. :P….. The only thing I cud do is keep guessing whts going on in the kitchen……. Then he comes with a plate and surprises me wishing nd singing the bday song …. Tht was so sweet of him……. I was gifted a Samsung star……… Dinner at my fav chef’s restaurant… Sanjeev Kapoor’s Khazana….. nd a movie….. made my day very spl…. I cut 2 cakes one was vch was prepared by Guru (Rawa Cake topped with Blackberry yogurt ice cream) …. Nd other one was in Khazana … they made a Chocolate brownie topped vth ice cream…. Vch was tempting nd yummm…(not to forget tht was my hubby’s Idea …it was a surprise too )Of course U guys who wished me through orkut nd facebook , mails also made the day special…….and my best o best friend who cald me….. Thank U

Bread Pizza with a Veggie Salsa

Have left over bread at home?? Thinking what to do??? So was I doing!!! But now I don’t need to…. Bcoz I have many options…. I use them in chapathis, make rolls, Sandwiches, and now Pizzas…. Yeh U heard it ryt Bread Pizza

My last post was regarding bread so I thought it wud be great to post something related to it, here is the recipe.
We Need:
Bread Slices – 6-7
Pizza sauce – ½ cup
Vegetable (corn kernels, mushrooms, tomato, capsicum – all three colors, onion
Mozzarella Cheese Grated- 1 cup
Italian seasoning (rosemary, basil, thyme, oregano) – to sprinkle on top
Salt to taste

For the Pizza Sauce:
  • 1 cup tomato paste
  • 6 glasses(small) warm water (110 degrees F/45 degrees C)
  • 3 tablespoons grated Parmesan cheese
  • 1 teaspoon minced garlic
  • 2 tablespoons honey
  • 3/4 teaspoon onion powder
  • 1/2 teaspoon galic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon ground black peppe
  • 1/8 teaspoon dried red pepper flakes
  • salt to taste

Directions

  1. In a small bowl, combine tomato paste, water, Parmesan cheese,garlic, honey, onion powder, oregano, basil, ground black pepper, garlic powder,red pepper flakes and salt; mix together, breaking up any clumpsof cheese.
  2. Sauce should sit for 30 minutes to blend flavors.........
Now for the Pizza:
Cut all the veggies into small dices and saute them (no need to add oil).
Place bread slices on a baking tray. Apply pizza sauce on all the slices. Spread all the vegetables.
Sprinkle salt on every slice (make sure u don’t add much salt).
Sprinkle mozzarella cheese & Italian seasoning on top of each slice.
Bake it for 5 minutes or until cheese melts @ 350*F

Yumilicious Bread Pizza is ready to serve.

Onion Bread

Heyaa!!!! I am sure all r in pink of health. Its gona be all about baking & baking in my blog for few weeks. Those biscuits or may be bread….etc …..Etc. It’s been long time I have shared ne bread recipe with you guys…. Common today is the ryt time…. I’ll share it with ya all.

When matter comes about time I remember Amma a lot and thtz bcoz wheneva she tells me to do some work I have a answer ready “Amma magiri karta” (Mom I’l do it later). Yeh I was a lazy daughter (not always I must say :P) …………………. Whateva it may be I used to do those work but ‘Not In Time’. :P

Now I feel very bad for it…. But m sure most of them r very lazy b4 their marriage bcoz they Neva have ne responsibilities or something like tht???? Isn’t it??? Anyways I’ll keep pulling on my story later…. So how about the bread talks now????

Every time we visited a supermarket (In SA), my hub used to luk at the pack of onion flake as if he is gona grab them from there…..But then it was “donno how it wud taste next time” …but then came a auspicious day :D to buy those flakes….. I must say they ver really tasty (it was just like fried onions)…. I used them in soups..Gravys….etc… etc Then I decided to add them in breads how about A Onion bread (we love onions…. A onion story some other time :D). I tried it my own way…. I must say it ot only was fluffly it was Yummy too…

I wud like to share the recipe with u guys so that u guys can try it out and tell me how it came out….. J

We need:


Wheat flour(Atta) - 2 cups ,Luke warm water - 1 cup ,Salt - 1 tsp ,Olive oil - 2 tbsp,1 tbsp active Yeast, Onion flakes - 7-8 tbsp, Sugar - 1 tsp.

Method:

Place yeast, sugar and milk in a bowl and mix to combine. set aside in a warm place for 5 minutes or until bubbles begin to form on surface.

Mis together the flour, salt, oil and yeast mixture,onion flakes in a bowl and mix until a smooth dough forms. knead on a lightly floured surface for 5 minutes or until smooth and elastic, adding a little extra flour to the dough if it becomes too sticky.

Roll it into a round shape and allow to rest for n hour or more.

Now knead the dough again nd mix well nd rest it for another hour. ( roll the dough into the shape u want to bake rectangular or round)

Preheat oven at 350F

So if u see onion flakes ne where do not stare Just buy them :D.

Don worry if u don’t get onion flakes then u can fry then until golden brown and ad them up too

Follow my Thumbprint..............

After so many months I m posting this recipe…. Sushma of Authentic food delights was asking me this recipe ….some of my other frenz did too… M really sorry girls it went of my mind ….. today after so many days I remembered about this so thought of posting it…..

My first cookies wasn a big hit….but I never lost hope :P I folowed the spider rule….try n try til u succeed.

Here is the recipe for The Cookies
Ingredients
1/2 cup butter, softened
1/4 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 cup all-purpose flour
2/3 cup any flavor fruit jam or any preserve ( I used Cherry preserve)
1/4 teaspoon salt

Directions
Preheat oven to 300 degrees F. Grease cookie sheets.
Separate egg, reserving egg white. Cream butter or margarine, sugar, and egg yolk.
Add vanilla, flour and salt, mixing well.
Shape dough into balls. Roll in egg white. Place on cookie sheets about 2 inches apart.
With thumb, dent each cookie. Put jelly or preserves in each thumbprint. Bake for another 12-13 minutes

Asparagus Duo Soup with Veggies nd Mushrooms.......Slurp

A months time off from blog…nd now m bac… I Hope U guys haven’t forgotten me…If ya have then I u guys better refresh ur memories….. M bac with a hot soup….
I guess all in mangalore have forgotten tht there is a season called winter……Winter starts from oct nd is on till Feb…… But these days its just 2 seasons there Summer nd Rainy season….nd winter season has also changed into summer nd rainy season….Its burning hot during the day nd heavy rains pouring after 7……Thunder Lightning Ahhhh M afraid……..But apart from all this what I loved in mangalore was the Love I got from all….. My Family and my frenz….I enjoyed Amma’s food…….Mayi’s Sambar….Nd I too cooked sometimes :P…..
When it comes to frens the first one who met me when I came was V, he made me laugh to the core….. Then a bunch of frenz…in blore Sandy,Durga,Madhu,Niru…Miss ya all.
I enjoyed Rasamalai….. made by Uj, Aamras made by Suma.
I met Suma my Blogger fren…..nd had a Gala time. Suma was a sweetheart she treated me with my fav’s Aamras, Kaaju Katli(double dessert I can Say ) and Vada. I enjoyd tht day. Her daughter Smera was such a darling I just loved speaking to her. Suma’s in laws nd her Parents too everybody treated me one among them.
I hope to meet ya soon…. Nd wish to meet many more blogger frenz.
Its been 2 days in the New place...The weather is really pleasant. I m trying to get along with things…
Ok now after all the story il come bac to the recipe
Is the weather cold???? Then y not try a hot soup…..A readymade soup with a twist will do??? Yeh y not…if u feel lazy to cook then this will obviously do…..

We need:
A pack of soup powder- I used Maggi Asparagus Duo… U can use ne one of ur choice..but if u find this one then do try it once.
Vegetables thinly sliced ( carrot, beans, onions, mushrooms, and sweet corns) – 1 cup for 1 packet
Italian seasoning
Salt If required
Butter 1 tbsp

Method:
Mix the soup powder according to instructions.
Now In a bottom pan add butter when melts add all the veggies nd sauté it.
Do not over cook the veggies, keep them crisp.
Now add the soup mixtue and stir well.
Add more water if required.
At last add Italian seasoning ½ tsp.
Add salt if required and Serve hot.

Wishing A very Happy and Prosperous Deepavali Celebrate it with a lovely sweet


Wishing All my friends a very happy Deepvali... I kno I m a day late to post mind me i was too busy... Today my SIL delivered A baby Girl so i was bz going here nd there nd now i took a deep breath huh!... All in the family have double joy Deepavali plus the arrival of new one in the Family...

Ok without much a do I will post my Deepavali special... Gajar Ka Halwa

1 kg Carrots
1 litre Milk
1 teaspoon Cardamom seeds
3/4 cup Water
3 tablespoons Ghee
2 tablespoons Raisins
2 tablespoons Almonds
2 tablespoons Pistachios
450 grams Sugar

Put the water to boil, when it starts boiling add the grated carrots. Cook for 5-7 minutes.

Add the milk. Cook on a low flame for 1 hour stirring occasionally. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.

Add ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins. Mix well.

Remove the gajjar halwa from heat and arrange in a serving dish. Garnish with almonds and pistachios

What do u think about this dish???

Which dish do u remember when u think of Pumkin??? Fry, Curry, kheer… If not u I just cud think only about these.
One fine day I see pumkin calling my name loud from my fridge… telling me ‘Hey Gal y r u gonna leave me rotten’ then I pitied on the pumpkin nd thought il take them out n now wht do do vth it??? My thoughts stiked to paratha nd kofta… I always tasted veg kofta… but Kofta’s vth pumpkin??? Never tried??? Now after this recipe I m sure all u guys will try bcoz it turns out to be lovely. I searched for the sanjeev kapoor book nd found beg kota recipe in it( I can always rely on his recipes bcoz they turn out to be indulging)… I replaced all the veggies with pumpkin.
Now after the curry I had to do some roti/chaps/paratha…. I decided for pumpkin paratha bcoz I had to empty pumpkin so tht it doesn cry in my fridge. Nd yepppppy I did.
Now to the recipe:
Ingredients

For Koftas

1 bowl grated pumpkin
2 tsp lemon juice
1 tblsp. gram flour
1 tsp sugar.
1 tsp coriander leaves
oil for deep fry
salt and chilli powder to taste

For Gravy

1 bowl cashewnut paste (I used ½ bowl cashew nut paste nd half bowl almond paste)
2 onions (finely Chopped)
1 bowl Yogurt
2 tbl sp fresh cream
salt, chilli powder, turmeric powder to taste
1 tsp sugar
1 tsp ginger and garlic paste
3 tomatoes (grinded)
2 tblsp butter
1tsp coriander leaves

Method:
To make Koftas, mix grated pumpkin, lemon juice, salt, chilli powder, corriander leaves, sugar and gram flour.

Roll out into small balls and deep fry.

For the gravy
Heat butter in a pan, add onions, fry until light brown.
Then add grinded tomatoes, ginger garlic paste, cashewnut paste, yogurt, freash cream, salt, chilli powder, turmeric powder, coriander leaves and sugar.
Cook until the gravy becomes little thick and then add the koftas.
Remove from flame after a min or 2.

Serve Hot with Parathas.

For the Parathas:
1 Cups Whole wheat flour
1/2 cup grated Pumpkin (we call it Lal Bhopla here, the flat round variety)
2 tsp chopped fresh green coriander leaves
2 tsp red chilli powder
1 tsp turmeric powder
1 tsp amchur powder
1/2 tsp jeera powder
Salt as per taste

Method:
In a pan add pumpkin and cook for about 5 minutes and keep it aside.

 Now combine all the ingredients in a bowl.Pumpkin contains lots of water, so knead the dough it. Use more water if required and knead into a soft dough. Make small lime size balls of the dough.Roll out each ball on a flat surface with a rolling pin into a circle(mine came like some Map though). Dust some flour if required. On a hot griddle/tava, cook each paratha on both sides applying little ghee on both sides.
Serve hot.

P.S -Actually u can make a dough with wheat flour and add all the masala to the pumkin and stuff it into the dough. (I had tried tht but cudn succeed so I mixed everything together).
