Summer Treats # 4 - Mango Ice Candy

Here I am with our favorite fruit candy.. Yes Mango Ice Candy. Perfect for summer and for those who crave to eat mango too! 1 cup mango puree, from a fresh ripe mango 4 Tablespoons Sugar(adjust according to the sweetness u want in your candy its better to add a little more sugar as once it freezes, u may feel its a bit lesser sweet) Little Water
Method: Put these ingredients in a blender or food processor. Blend or pulse till smooth. Now fill the candy moulds and freeze it until done and is able to demould.

Summer Treats # 3 - Panak and Pachodi, And Wishing U all a Happy Ramnavami

As I grew up in temple premises I know what they serve on which occasion :P. On A note we have our own family temple and that’s y I know… :D
I remember when they used to serve Prasad we used to be the last ones to go there and receive it and that’s becoz we knew tht it wud be remaining at home :D…. but when it comes to Panak nd Pachodi we wud be the first ones to run as we knew there wudn’t be ne thing remaining at home :D… Pachodi was always served very lil nd it wud be a tbsp….. but I wud always call them back nd tell “Makka He Swalp Chada Jai”…. :D (I.e. I need this one a bit more)…. Awwww those were the days….
This is a Super cooler  and perfect for Summer as well as a throat soother

Here is the recipe of the soothing panak
4 tbsp grated Jaggery
2 glasses of water
Juice of half lime
1” dry ginger (shoonti)
7 -8 peppercorns
1 cardamom
Grind dry ginger, pepper corns and cardamom into a fine powder.
Mix this powder along with water and jaggery , mix until jaggery dissolves.
Serve Chilled!

Summer Treats # 2 - Bonda Lime

Coconut water is the juice of young tender coconuts and is a natural energy drink. It is delicious, refreshing and very nutritious and has tremendous health benefits.Coconut water is naturally sweet, ingratiating, promoting proper digestion, and naturally helps clearing our urinary paths, and lubricating our body systems. India is one of the leading producers of coconuts in the world producing 13 billion nuts per anum.

Bonda or Shiyala/tender coconut  gets back my childhood memories… where we used to fight for the Malai and even the Karki( the layer after the malai) oh those where the days when we used to wait for Dad to remove the malai from the tender coconut. This Is Perfect for Summer... A Cool and Refreshing Drink to Enjoy!

So here is something Natural to quench the thirst. Bonda Lime - A coconut juice cocktail made with bonda ,(i.e. tender coconut in tulu, a local language in Mangalore), lime and the tender malai. 1 Tender coconut (select the one with thin malai)

Summer Treats #1 -With Love- Mango Yogurt!

First Of All Wishing all my Friends and Readers a Happy Ugadi.
May God shower his blessings on you and your Family.
With this New year wishes lets start today's post.....
King of fruits has arrived and we aren’t going to miss it even a single day from now.. My Little M love this fruit just like us J She loves yogurt too and I make it a point to that to her every day in various forms… Most of the time it is buttermilk. Now that this Richs and Sunny yellow fruit has arrived I thought of making something with both her favorites. Yes Yogurt and Mango go together and I name it Mango Yogurt.
I used to get store ones sometime back and that was when Mangoes were not in season now that it is I will make the most of it J and even store some puree in the freezer for non season times.
 With this recipe I will Start a New Series Especially for Summer and call it SUMMER TREATS, which will include juice,coolers,ice creams and pospsicles
 Now lets get into the recipe, its as simple as that and we need:

Chinese food is the next favorite to our Konkani food. We at home love it.  Mainland China is the only place I have tasted Yummmmmmy Chinese food, now that doesn’t mean others are bad they are yummy too.  These days I cook at home as much as possible especially Chinese because here in middle east I find a very less variety when it comes to Vegetarian. 

I still remember going to one of the restaurants in mangalore during college days and ordering for Schezuan fried rice…. Oh my it was nothing but a chilli rice. Apart from the chillies we couldn’t taste anything and that day onwards I hadn’t ordered this kind of rice in any Chinese joints. But to my luck one fine day I got a chance to taste the same rice which was much more tastier and yummy to my last experience or say 1000 times better.
